Toms Place Seafood Bisque

¾ c butter
¼ c chopped onion
1/3 c chopped green onion
2 c chicken broth
1 c chopped celery
3 carrots chopped thin
1 tsp salt
1/8 tsp pepper
*Ole Bay toTaste
½ lbs cod, halibut or snapper (frozen works fine) cut in small pcs
3 c whole milk
1 c heavy cream
1/3 c flour
2 cans crab meat
1 bag of frozen salad shrimp (frozen from Kroger or Walmart)
1-2 cans clams

Melt butter in large pan. Add onion and green onion and cook. Stir in chicken broth, celery, carrots, salt, pepper, thyme, bay leaves and fish. Simmer for 25 minutes. Slowly add 1 c milk to flour. Mix until smooth. Stir remaining milk and cream. Add milk mixture and Bring it all to a boil. Stir in the rest of the seafood and simmer. 

I usually double this for a larger crowd.  Making it the day before seems to make it better!
You can add more seafood if you like!
