Sweet Italian Turkey Sausage and Mozzarella Stuffing

10 c (1/2in) cubed French or Italian bread
1/3 c + 2 T olive oil
1 lb sweet Italian turkey sausage (casing removed)
2 large onions minced
3 cloves garlic minced
5 stalks celery diced
½ lbs mushrooms sliced thin
1/3 c cream sherry
3 oz thin sliced Genoa salami
¾ lb fresh mozzarella ¼ in cubes
1 ½ -2 c chicken broth
1 ½ T Italian seasoning
1 ½ c minced fresh parsley
Salt and pepper

Spread bread in pan in single layer. Drizzle with 1/3 c olive oil. Put in oven for 15 minutes to toast. Cook sausage and crumble in small pieces. Transfer to large mixing bowl and combine it with toasted bread cubes. Add 2 T oil to sausage dripping and return to medium-high heat. Add onions, garlic, celery and sauté for 10 minutes. Stir in mushrooms and sherry sauté for another 7 minutes. Add veggies to bread/sausage mixture. Stir then add salami and mozzarella. Pour in chicken broth and mix season. Bake 350 for 30-45 minutes.
