15 lbs of seaweed (ask your fish person)
16 (1.5lbs) lobster
16 ears of corn shucked
5 lbs red potatoes, parboiled halfway in salted water
10 lbs large clams
1 (750ml) bottle white wine
2 yards wet burlap
#3 galvanized washtub (look at your hardware store)
Start fire 1 hour in advance. Spread ½ of the seaweed at the bottom of the tub. Place lobsters on top of seaweed. Then layer corn then potatoes. Arrange the raw clams on top of the veggies then top off with the remaining seaweed. Pour wine into the tub. Place wet burlap over the food and tuck in the edges so the steam stays inside. Place tub on coals and every 15 minutes moisten the burlap so it doesn’t catch on fire. Cook 45 minutes. Serve the lobster bake strewn out on newspapers, with melted butter and coarse salt and favorite spices/ condiments.
