Turkey and Spinach Stuffed Shells

1 T olive oil
1 onion, chopped
2 cloves garlic minced
1 (1.25 lb) package ground turkey, beef or beef and sweet sausage mix  *I like to use the beef and sweet sausage in mine
1 (10 oz) package frozen chopped spinach, thawed and drained
1 (8 oz) package cream cheese, softened
1 (8oz) package shredded mozzarella cheese
2 C grated parmesan cheese, divided
1 C chopped roasted red bell pepper(opt)
1/2 - 1 Cup mushrooms (I use jar)(opt)
1/2 tsp salt
1/2 tsp ground black pepper
1 (12 oz) package large pasta shells cooked according to package dir.
I also add Italian spices for flavor
Fire Roasted Tomato Sauce- See recipe below

Preheat oven 350.
Spray dish with nonstick spray. 
In large skillet, heat oil on high heat.  Add onion and sauté 3 mins.  Add meat and brown, remove from heat and stir in cheeses, red bell pepper and mushrooms. Spoon mixture into shells. 
Spoon half Fire Roasted and I use Prego too- into prepared baking dish. Place shells in an even layer and over sauce, add remaining sauce over shells
Sprinkle with remaining parm cheese.  add moz also
Bake 15-30 min until cheese is melted.

Fire Roasted Tomato Sauce

1- 28 oz can crushed tomato's
1 14.5 oz can diced fire roasted tomatoes
1 tsp Italian seasoning
1 tsp salt
1/2 tsp ground black pepper
1/2 tsp sugar

Mix and chill until needed.
