Summer Stir Fry
2 T butter
2 T olive oil
4 cloves garlic, minced
12 whole jumbo shrimp, peeled and deveined (toss with ole bay)
2 whole zucchini slices on a slight diagonal
2 ears corn, cut off cob
1/2 C grape tomatoes sliced half lengthwise
Add heavy cream to thicken
Salt and pepper to taste
Heat 1 T butter and 1 T olive oil in a large skillet over medium heat. Add minced garlic. When oil and butter are hot, add shrimp and cook 3 minutes. Remove to plate, do not clean skillet
Add the rest of butter and oil and heat over medium heat. Add zucchini slices in a single layers and cook one minute tossing once. Scoot zucchini to the edge of the pan then add corn. Cook 1 minute then add tomato, salt and pepper. Toss around then add shrimp. Cook for additional 30 seconds then remove from heat. Serve of cauliflower rice or white rice.
Overnight French Toast Bake
1/2 C butter, melted
12 Slices bread (I used potato bread)
3/4 C brown sugar
1 tsp cinnamon
5 eggs, beaten
1 1/2 C milk
1 1/2 tsp vanilla
Powdered sugar (opt)
1. In a 9x13 pan pour melted butter
2. Layer 6 pieces of bread over the melted butter
3. In a small bowl mix together your sugar and cinnamon and mix half
over the top of bread
4. Top with remaining 6 slices of bread
5. In a large bowl whisk together eggs and milk, vanilla and pour over top of bread.
6. Sprinkle with remaining brown sugar and cinnamon mixture
7. Cover and refrigerate 8 hours or over night
8. Preheat oven 350
9. Place covered dish in oven and bake 30 mins
10. Remove foil and bake additional 15 mins
11. Remove from oven and serve with powdered sugar and syrup
This is a very good holiday dish for breakfast

White Chicken Lasagna Rollups
8 lasagna noodles, cooked according to package
2 cups Alfredo sauce * I did half and half with Red Sauce (Prego)
2 chicken breasts, cooked and shredded * I like to use rotisserie chicken
8 oz cream cheese, softened
1 cup shredded mozzarella cheese
1 cup Parmesan cheese + 1/2 cup, divided
2 tsp garlic powder
2 tsp Italian seasoning
Salt and Pepper to taste
Optional: fresh parsley, finely chopped
1. Preheat oven to 375. Lightly grease a casserole dish
2. Lay cooked lasagna noodles out in single layer on a clean work surface
3. In a bowl, combine the chicken, cream cheese, mozzarella cheese, 1 cup Parmesan cheese, garlic powder, Italian seasoning, and the salt and pepper to taste. Mix well
4. Spread about 1/4 cup of chicken mixture onto each of the noodles. Roll noodles up tightly.
5. Pour 1 cup Alfredo sauce into the bottom of the casserole dish(I used 1/2 red sauce on one side. Place each roll up side by side in the baking dish. Pour remaining sauce over the roll ups. Sprinkle with remaining Parmesan cheese.
6. Bake 10-15 mins until cheese is melted. Sprinkle with parsley if desired.
