Baked Shrimp Scampi (Food TV)

2 pounds shrimp in shell
3 T. olive oil
2 T. dry white wine
Kosher salt and freshly ground black pepper
12 T. ( 1 1/2 sticks) unsalted butter, at room temperature
4 tsp. minced garlic
1/4 C minced shallots
3 T. minced fresh parsley leaves
1 tsp. minced fresh rosemary leaves
1/4 tsp. crushed red pepper flakes
1 tsp. grated lemon zest
2 T. freshly squeezed lemon juice
1 extra large egg yolk
2/3 C panko
Lemon wedges, for serving

Directions:
Preheat oven to 425
Peel , devein and butterfly the shrimp.  Place the shrimp in a mixing bowl and toss gently in the olive oil, wine, 2 tsp. salt and 1 tsp. pepper until combined.

Start from the outer edge of 14 in oval gratin dish or rampkin single dish. Arrange the shrimp in a single layer with cut side down with tails curling up and towards the center of the dish.
Pour the remaining marinade over the shrimp.  Spread the butter mixture evenly over the shrimp.
Bake 10-12 mins until hot and bubbly. If you like, broil for 1 min for browning top of dish.
